| Cooking tips | Take the piece out of the refrigerator 30 minutes before cooking so that it is at room temperature. This avoids thermal shock which would contract the muscle fibers and toughen the meat. That would be a shame. Sear the piece in a very hot pan, without adding any fat - the meat is naturally marbled - until it is caramelized on each side. The famous Maillard reaction, which allows the juices to be trapped and therefore preserves all the flavors of the meat. Be careful not to prick the meat during cooking! For those who like their meat more cooked, lower the heat (medium), and leave a few more minutes on each side A little fleur de sel and welcome to the shank fan club! |
